What You’ll Need
Ingredients (for 4–6 servings):
1 cotechino sausage (fresh or precooked, ~500–800 g)
1 onion
1 carrot
1 celery stalk
1–2 bay leaves
Water (enough to cover the sausage)
Optional: cloves, peppercorns
If you’re serving it traditionally:
300 g lentils or mashed potatoes
Olive oil, garlic, salt, and pepper (for the side)
Using a precooked (vacuum-packed) cotechino
Do not open the package.
Keep it in its sealed bag.Simmer in water.
Place the whole bag in a pot of gently simmering water for 20–30 minutes, as per package instructions.Open and serve.
