Fontina DOP Valle D'Aosta is a Denomination of Origin cheese Protected by the aroma of milk, with a sweet taste and with a soft and melting paste in the mouth.
 
The Consortium, formed in 1957 initially as the Fontina Producers Consortium and subsequently as the Fontina PDO Producers and Protection Consortium, supervises the production and trade of the Fontina product, and ensures the marking of the forms conforming to the Fontina production specification.
