Gorgonzola is a blue cheese, produced in Italy from whole cow's milk. It is a DOP cheese originating in the province of Milan and its historical production areas are the provinces of Milan, Como, Pavia and Novara. The latter has become its main producer in the last century. Gorgonzola takes its name from the homonymous Lombard town that gave it its birthplace, where the Gorgonzola Festival is celebrated every year towards the end of September.

 

To be defined as such, Gorgonzola DOP cheese must comply with the production specification; the same provides that only pasteurized cow's milk is used for its production, therefore the use of sheep's or goat's milk or buffalo milk is not allowed. A blue cheese (even if it was, at the start, gorgonzola itself) that has additional ingredients not foreseen by the specification (for example: mascarpone, chili pepper, saffron, etc.) cannot even boast the name gorgonzola.

 

It is a raw paste cheese, pasteurized milk, fat, straw-white in color, whose green speckles are due to the blueing process, that is to the formation of molds due to the addition of penicillium spores to the milk (mostly selected crops at an industrial level). The rind is not edible.
